Colourful and Healthy Fruit Custard

The festival of colours aka Holi is around the corner..so why not celebrate this festival with this colourful,tasty and refreshing fruit custard.

Ingredients 

  • ⅔  cup – makhana (dry and roasted)
  • ⅓  cup – cashews
  • 8-9 strands – saffron
  • 1and ½  cup – warm milk
  • 1/2 teaspoon – cardamom powder
  • 1 and ½ tablespoon –  honey OR brown sugar OR regular sugar 
  • 1 cup – fruits (any fruits of ur choice,finely chopped)

Method

  • Soak makhana,cashews and saffron in the warm milk for 20-30 minutes 
  • Blend the mixture until smooth and refrigerate until chilled
  • Pour over the fruits and enjoy chillied!!

NOTE

  • You can use any type of fruit of your choice
  • Make sure the custard is super chilled so it tastes more refreshing

Sizzling Hot Cucumber Salad

Ingredients

  • One to two Large cucumber (cut into thin strips)
  • One tablespoon – Sesame seeds (roasted)
  • One tablespoon – Peanuts (roasted)
  • ½ tablespoon – Chili flakes
  • Salt to taste
  • 4 cloves – Garlic (chopped finely)
  • One tablespoon – Lemon juice

Method 

  • Mix the cucumber, sesame seeds and peanuts
  • In a bowl; Mix garlic, lemon juice, chili flakes, salt and pour in some hot oil and mix until aromatic
  • Mix in the sauce and top with more peanuts and sesame seeds
  • Mix well and enjoy!

NOTE

  • You can use other veggies like carrot or lettuce 
  • You can optionally use a little chili oil for an even more spicy kick!

Raw Papaya Thai Salad

Thai papaya salad consists of grated raw papaya,cucumbers,tomato.This salad is extremely refreshing and crunchy.A perfect change to palate from regular salads.You can find the recipe of this delicious salad below.

For salad

  • 1 cup – Raw papaya (greated)
  • 1 small – Tomato (cut into strips)
  • 1 small – Cucumber (cut into strips)
  • 1-2 – Red chilies (finely chopped) 

For dressing

  • 3 – Garlic cloves (minced)
  • 1 TBSP – Soya sauce 
  • Salt to taste
  • 1 TBSP – Sugar OR Jaggery powder 
  • Juice – Half lemon 
  • 2 TBSP – Peanuts (roasted)

Method   

For dressing 

  1. Put all the ingredients of dressing in a bowl and keep in the fridge so that the flavors infuse
  2. Keep in the fridge for at least 15 minutes 

For assembling the salad 

The dressing needs to be mixed in the salad just before eating

  1. Mix all the ingredients for salad in a bowl
  2. Ideally add dressing to a portion which will be eaten or served.

NOTE

  1. Let the sauce sit in the fridge for sometime.The longer it’s kept,the more the garlic will infuse the sauce and give it a amazing flavour
  2. You can also add various vegetables to make the salad according to your liking.Like onions,spring onions,capcicum or peppers 

Serve chilled, and enjoy a refreshing, healthy salad that’s bursting with vibrant flavors and textures.

Spicy Mexican Fried Rice

This rice is too easy to make and it only takes 45 minutes.It’s spicy,it’s cheesy what else could u want? And this is how you can make this at home as well

Ingredients

  • 1 cup – Rice
  • 2 cup – Water
  • Pinch – Salt
  • 1 big – Onion (sliced)
  • ¼ cup each – Capsicum (red,yellow,green)
  • 1 Tsp – Garlic (minced)
  • 2 Tbsp – Tomato puree
  • ½ Tsp –  Red chili paste
  • ¼ Tsp – Jeera
  • 2 Tbsp – Cheese (any choice)
  • Pinch – Oregano & Chili flakes

Method

To make the rice

  1. Soak rice in water for 30 minutes
  2. Drain & keep aside
  3. Heat 2 tbsp of oil in a wok and stir fry the rice for a few minutes
  4. Stir till it gets fried and changes colour slightly (partially toasted)
  5. Add water & salt
  6. Cover and cook on slow flame till water gets absorbed

To put together the fried rice

  1. Heat oil,fry garlic till aromatic and & add onions and capsicum & saute them
  2. Add oregano,salt,pepper,tomato puree & chili paste
  3. Stir & add cooked rice and mix in the cheese & salt as per taste
  4. Sprinkle oregano & chili flakes
  5. Serve hot

NOTE

  • You can add any type of vegetable u want to
  • You can even add chicken,tofu,paneer
  • To add a flavourful twist on the rice,you can add different sauces to ur rice

Once the fried rice is cooked, serve it hot with a garnish of fresh herbs or extra toppings. Enjoy the perfect balance of savory, crispy, and flavorful goodness in every bite!

Moong Dal Tikki

Ingredients 

  • One  cup – moong dal soaked for at least 4  hours
  • 100 grams – Paneer
  • Two – Green chili chopped 
  • Salt to taste
  • Any other spices according to your liking (chili powder,amchur powder,dhania powder ect)
  •  One teaspoon – Chaat masala
  • Onion rings (for garnish)
  • One teaspoon –  Lemon juice (for garnish)
  • One- fourth cup – Besan

Method

  •  Mix all the ingredients and mash it with your hands to make a bindable mixture.
  •  Form small circular tikkis and spray a pan with some ghee/ oil and cook from both the sides until golden and crispy.
  • Drizzle lemon juice and chaat masala and serve hot with your favorite chutneys or curd!

Parle G Dessert

This dessert is a different take on a custard pudding instead of fruit we are using the OG biscuits ‘Parle G’

Ingredients

  • 3-4 packets – Parle G biscuits
  • Half teaspoon  – Coffee
  • Half cup – Hot water
  • One third cup – Condensed milk
  • Two tablespoon – Custard powder
  • Two glasses – Milk
  • Two cups – Heavy whipping cream

Method

  • Beat the cream until peaks form
  • To make custard mix the custard powder in half cup cold milk and put the remaining milk to boil in a pan
  • Add the custard slurry in the rest of the milk
  • When the custard starts to thicken up,add the condensed milk and keep stirring. Take off the gas
  • Once the custard has cooled strain it through a sieve so that the custard has no lumps and has a smooth consistency 
  • Mix the cream and custard together in a cut n fold method 
  • To prepare the coffee mixture,mix coffee in hot water
  • Dip the biscuits in the coffee and start layering them in a dish
  • Put a thick layer of the cream and custard mixture over the layer of biscuit
  • Keep layering until you’re done with the mixture
  • Decorate the top with fruits,crushed up biscuits or anything you want to 
  • Refrigerate for a new hours
  • Enjoy chilled!!

Variation: You can add an additional layer of fruits in between the cream and biscuits to make it healthier!!

Eggless Crepes

Crepes are a sort of thin pancake which can either be served with a sweet or savory filling.You can add your own innovations to customize your crepe how ever you  like

Ingredients

  • Half cup –  Milk 
  • Two-third cup – Water 
  • One – fourth cup – Butter (melted)
  • Two tablespoon –  Vanilla extract
  • One cup – Flour 
  • One tablespoon – Sugar 
  • A pinch of salt 
  • One tablespoon –  Vegetable oil

NOTE

  • You can also use half cup of flour and half cup of whole wheat flour to make it healthier.
  • You can also add sprinkles or chocochips to make it more colorful

Method

  • Mix together all the dry ingredients together until well combined
  • In a another bowl mix water,milk,vanilla till well combined
  • Mix the dry in the wet until there are no lumps and add the rest of the ingredients(make sure you add the butter after the mixture is made otherwise the milk and butter will clump up and essentially ruin the batter)
  • On a medium flame pour some batter on a non-stick pan and spread the mixture thin and even.
  •  Flip once the crepe starts to bubble
  • Make sure the crepe is well done so your not eating anything raw (it should have brown spots and it should not look white in the center,it means that the crepe is raw)
  • You can serve with chocolate syrup,whipped cream,ice cream.The list is endless
  • Eat it while it’s still hot!!

 NOTE

  • You can also use half cup of flour and half cup of whole wheat flour to make it healthier.
  • You can also add sprinkles or chocochips to make it more colorful

Satvik Aloo 

This is no Onion Garlic recipe and easy to make.Ever want to eat a well balanced and filling meal,but don’t have time or energy to make one? Well then this recipe is just perfect for you.This contains no onion,garlic or tomatoes.

Ingredients

  • 10 – Baby potato
  • 10 – Cashews
  • 10 – Raisins 
  • 1 tablespoon – Sesame seeds
  • 1 tablespoon – Kasoori methi
  • 1 tablespoon – Turmeric powder 
  • 1 tablespoon – Chili powder 
  • Salt to taste 
  • 1 tablespoon – Garam masala 
  • ¼ cup – Milk 
  • 3 tablespoon – Ghee 
  • 1 tablespoon – Cream 

Method

  • Saute the potatoes in ghee till golden brown
  • Grind cashews,raisins,sesame seeds and kasoori methi with a little bit of water in a blender until you get a puree 
  • Add this to a pan along with mustard oil,turmeric,chili and salt stir to mix well
  • When the mixture stars to split,add garam masala and milk and then add the potatoes
  • Stir to mix well and enjoy it hot with rice or roti!!

Instead of potatoes you can also add paneer or any other veggie you like to make your own version

One serve brownie (microwave)

You want to have a dessert but don’t want to share it with anyone? Well this dessert is perfect for you!!

Ingredients

  • 30 grams – dark chocolate(melted)
  • 22 grams – melted butter
  • 10 grams – sugar
  • 35 grams – maida
  • 30 ml – milk
  • A few drops of vanilla essence 
  • Eight – walnuts chopped
  • Handful – chocolate chips

Method 

  • Melt the chocolate and add the butter then mix it well
  • Add the rest of the ingredients 
  • Add the mixture in a greased pan and put in the microwave for 2 mins
  • Serve hot with ice cream!!

This single serve brownie is the perfect for portion control and tastes heavenly

MILK PEDA

This is one of the simplest recipes when you want to eat an Indian sweet and don’t want to spend time in the kitchen for too long. This typically would take 10-15 min to make. I have always made on Rakhi (Indian festival where brother sister bond is celebrated)  and if I have sudden guests over. My daughter loves to makes it shapes in the end and decorate

Do give it a try simple sweet recipe

INGREDIENTS

  • Paneer- 100 grams 
  • Cardamom powder – 1 pinch 
  • Cashews – 8 
  • Milk – 40ml 
  • Milk maid – 100 ml 
  • Cream ( fresh ) – 40 ml 
  • Milk powder – ½ cup 
  • Ghee – 1 tablespoon
  • Dry fruits for garnish

METHOD

1.  Grind everything in a grinder to form a smooth paste, except milk powder and ghee.

2.  Then mix the milk powder and the paster evenly in a non-stick pan.

3.  Cook it for 2-3 minutes and then add one tablespoon of ghee and keep stirring to avoid any lumps. 

4. Cook till the mixture leaves the sides of the pan. 

5. Take it out on a food paper and give it a more smooth texture by ploughing/ kneading. 

6. Let it cool and make it in your desired shape.

7.  Decorate it with your desired garnish of dry fruits.

8. You can chill it little before serving  

NOTES

  • This recipe makes about 15-20 small size pedas. 
  • U can make it like a barfi in square shape
  • My daughter once put chocolate inside it
